How to easily sun-dry tomatoes in the dehydrator

Do you have more tomatoes than you know what to do with? Are you burned out from canning and want to do something different? Me too! Let's try sun-drying tomatoes in the dehydrator!

I’ve got a great crop of tomatoes coming in and although I’ve already wasted some by not picking them soon enough, I want to be better at preserving our food that we spend so much time and love on.


I do use sun-dried tomatoes often and was looking at different ideas on dehydrating them in a dehydrator. It is pretty easy and you can preserve a lot of tomatoes this way. Here are the instructions that I’ve found online and have tried:


1 – Pick, wash, and slice your tomatoes into 1/4 inch thick slices.

2 – Sprinkle oregano and/or basil on top if you desire. No need to coat them in oil.

3 – Dehydrate at 150 degrees for 10 hours.

If your slices are too thick, they won’t completely dry in the 10 hours, so you’ll have to put those back in the dehydrator, oven, or air-dry outside until they are dry to the touch with no moisture left in them.

After 10 hours, I did have some thick ones that I’m air drying now. The remainder were very nice and I decided to vacuum seal them and include a moisture absorber inside with them just to be on the safe side.

The tomatoes that I used for this batch were my Costoluto Genovese, Italian heirloom, tomatoes and I sprinkled dried basil from my herb garden on top of them.
