Elderberry syrup

It is always nice to have some elderberry syrup around for colds, coughs, sore throat, flus, and building up your immunity. Elderberry is an antibacterial, antiviral, antimicrobial herb – among many other properties that I won’t list here.

It seems that I’m always either making elderberry honey and tincture to have on the ready or making another batch of elderberry syrup for family members.

Since I’m in the process of making another batch of elderberry syrup, I thought I would share the recipe so that you can make your own.

Start with organic elderberries

What you need is: 1 part elderberry tincture 1 part elderberry infused honey 1 part elderberry tea

One (1) part is equal to whatever works best for you. I usually use 1 cup as my 1 part measurement, and end up with a 3-cup bottle of syrup.

To make the elderberry tincture you need to: 1) Fill a jar 1/4 full with organic dried elderberries and fill the rest of the jar with 80-100 proof alcohol (40-50% alcohol). 2) Put the jar in a sunny, warm place (like a window sill or if it is warm outside you can put it in the sunshine) for 4-6 weeks and shake daily. 3) When the time is up, strain out the elderberries and compost them.

The liquid is the tincture, which will keep indefinitely due to the high alcohol content.

To make the elderberry infused honey you need to: 1) Fill a jar 1/4 with organic dried elderberries and the rest of the jar with raw honey. 2) Put in a sunny area like a window sill and stir the honey daily. Let this macerate for about 4-6 weeks.

If the honey is thick, the elderberries will rise to the top and you can scoop them out or you can heat the honey (which does, however, kill some of the good enzymes) and strain out the elderberries.

This also keeps indefinitely because of the honey.

To make the elderberry tea you need to: 1) Boil 1 cup of water then turn off the heat 2) Add 1/4 cup of organic dried elderberries 3) Optional: Add 1 cinnamon stick, 3 cloves, and a slice of ginger 4) Cover and let infuse for 20-40 minutes. 5) When the time is up, strain out the ingredients and compost them.

Lastly, add equal parts of tincture and honey to the tea and stir. Then fill your jars!

The dosage is 2 teaspoons, 3x/day until symptoms subside. Shake the bottle before each use.

The alcohol and honey content keep this shelf stable for several years. But it probably won’t last that long anyway! I keep mine in the fridge. Enjoy!
