Energy balls rolled in coconut are full of adaptogens and yummy ingredients

Here is another recipe that I learned in my herbalism course. I have modified these energy balls to be my own recipe. It is full of adaptogens, which help our bodies adapt to stress, anxiety, fatigue and overall wellbeing. These are herbs or mushrooms that are safe to use as a tonic over a long period of time and create energy.

Ingredients: • 1/2 cup of creamy peanut butter (almond, cashew and other nut butters would be better) • 1/2 cup of sesame butter (aka tahini) • 1/2 cup of honey (maple syrup is also an option) • 2 Tbsp. Cocoa powder • 1 Tbsp. Siberian Ginseng root • 1 Tbsp. Ashwagandha root • 1 Tbsp. Gota Kola leaves • 1 Tbsp. Schisandra berries • 1 Tbsp. Reishi powder • 1 Tbsp. Lion’s Mane powder

Note: If you don’t have some of these herbs you can substitute in other apoptogenic herbs such as: Rhodiola powder or Holy Basil powder.

Optional ingredients: • Carob chips • Goji berries • Cranberries • Raisins

• Chopped nuts • Unsweetened shredded coconut

Notes: Make sure if you aren’t using powders, to grind them up into a powder using a coffee grinder or other processor. My Siberian Ginseng, Ashwagandha and Gota Kola were not in powder form, so I ground those up fine.

Also, I measured the non-ground ingredients prior to grinding. So, what measured as 3 tablespoons of herbs, was actually less than that after being ground into a powder. You should have about 8 tablespoons of herbs added to the mixture to give it a dough texture. You may have to adjust as needed.

I left the dried Schisandra berries as they were to add a little crunch. I also added 1 Tbsp. of Lily’s dark chocolate chips, which are sweetened with Stevia.

Directions: 1. Mix the nut butters and honey first before adding your powders and other ingredients. 2. Stir and mix the herb powders thoroughly into the nut butter mixture. 3. Add your optional ingredients in next. This should now result in a thicker dough consistency. 4. Roll the balls in the shredded coconut if desired.

You can put these into the refrigerator to harden them up a bit.

Dosage: If you rolled out 24 balls, take 1 of these per day. If you rolled out 48 smaller balls, you can take 2 of these a day. Enjoy!
